That's like saying that there are too many bump-mapped games out there. Cel-shading is simply a different way of texturing, and developers have barely scratched the surface of what is possible with this technology. Sure right now it seems like a gimmick what with all of the crappy cel-shaded third-party games flooding the market, but if SK could pull off that amazing MGS artwork in three dimensions using cel-shading then I would be in heaven. I doubt it'll happen, but it's nice to dream about.
