Same principal, but to give you a serious answer, if you're trying to make the stories historically accurate, it would be difficult, but maybe with the right backstory a minority cowboy could be interesting.

Darth Vader is mostly just a mask, not human, with a monotonic, robotic voice. I guess you could give him a hispanic accent, but considering that your example is from an iconic movie series (rather than a comic book mythos that has existed for decades and been explored many different times in many different ways), it'd be a little jarring, since we only have one example to compare it to (and because I can't seem to imagine it without an over-the-top flamboyant Don Quixote voice, but maybe I just lack imagination).
Of course, Star Wars is almost certainly set to be remade some day, so maybe in another 50 years, if Hispanic folks become the majority, this will be likely. :)

As long as he has the right masculine physique and can balance badass with intelligent professor, I don't see why not. Also, having only seen Raiders of the Lost Ark, once, as an adult, I suspect that I don't have the same attachment to the series as you, so maybe I can't relate.

Isn't it more creative to divert from the source material? :) It doesn't necessarily have to be a mindless P.C. affront to come over and rape your church and burn your wife, it could be an artistic decision. Questioning the motive for such a decision, I guess, would have to go to the guy who brought it up, a writer for some noname scifi site I've never heard of. But I wouldn't be against it, and I like the idea of Don Glover.

Go watch/read the plethory of other media forms, then. A new interpretation won't make them turn to ash. Just ignore it and move on, especially since you already have a recent enough movie series to draw from. I don't see the problem.
