There was Castlevania: Legacy of Darkness on N64, which was an improved version of the first game... I liked those games, really. Quite good games.
Other than that there are two 3d Castlevania games on the PS2 and Xbox, but while I haven't played them they don't look nearly as good. Instead of being behind-the-character action/platform/adventure games, they are zoomed-out slash 'em up action games with absolutely minimal adventure/puzzle and platformer elements. Everything I've heard about them makes it sound like they aren't that great... pretty much pure mediocre run-there-and-kill-the-things action.
Oh yeah, and I agree that Captain Olimar isn't such a great choice, as I said, but Dedede is cool... :)
