I do have trained ears and so called perfect hearing so that I can tell what key a sound is in, it's something I use in music and sound effect engineering. It could very well be that the songs in Donkey Konga are made by different artists emulating the original artists. When I had the game here for a few days I never just listened to the music, I was always playing along with the conga. But what I do remember hearing must have fooled me really good. My grandfather evens has an LP of Louie Louie that was recorded by the original artists but in the song he pronounces all the words so you can actually hear what he's saying :) and that version is in Donkey Konga as well.
There are pro-voice actors that emulate other well known actors, some of them emulate what they look like as well. But I had never heard of emulating a song so it sounds as close as possible to the original version with even the vocalists emulating speech patterns and in some cases the dialect and accents of the original artists, like with Willie Nelson. It's just weird...
