Here's some news I found at the bigbluebox forums, from one of the Fable testers:

Certainly at times you walk over a path, as I said, for obvious and different reasons. Whew! I was crying for a little while there. The testers there also said that while it's not quite as free as Morrowind and some areas do have strict paths, there are plenty of wide open areas in the game and the invisible barriers in those GDC videos will be removed in the final build.
