Alright, here's my list [in no particular order]:
Fable: From everything I've heard about it how could I not put it on my list? It's been a long time coming, but if it lives up to the hype it'll be one amazing game.
Metroid Prime 2 Echoes: It's Retro. It's Metroid. Loved the first and I'm sure I'll love the second.
Halo 2: While I'm not a big fan of Halo, it did have the foundations for a great FPS. If Bungie can put some more time into fleshing out and polishing this sequel it'll be a great game.
Grand Theft Auto San Andreas: I've had a ton of fun with the previous two and this one appears to expand upon what they did and more. A definite must-have.
Pikmin 2: With the elimation of the time limit Pikmin 2 looks like it'll be even more fun than the first.
Metal Gear Solid 3: Metal Gear Solid 2 is one my favorite PS2 games and I had a blast playing it, so of course I'm interested in the sequel.
Paper Mario 2: There's no explanation necessary really.
Star Ocean 3: The soon to be released sequel to one of the best RPGs on the Playstation. If it lives up to the standard set by the first the sequel could be one of the best RPGs on the PS2.
Baten Kaitos: The story sounds interesting and using cards in a turn-based RPG is at least a somewhat original idea. Also it's made by the same company that made Xenosaga and it seems to have been well received in Japan.
And that's my list.
