Of course remember there are already six Han Solo books (and some number of comics I have no idea how many) set between eps 3 and 4 -- the old Han Solo Trilogy about his exploits in the Corporate Sector, and the newer (ie post-Zahn) Han Solo trilogy that covers a lot of his backstory... that goes over most of it. I'm sure they could fit something in but they'd need to work around the story as it was set in those 6 books (or at least the 3 newer ones, if they don't use that time period he was in the CorSec) if they don't want to really annoy me... :D
Oh and how Han and Chewie met wasn't in the EU? Huh? I thought it was in the (newer) Han Solo trilogy... I might remember wrong but I thought there was something about how Han was in the Imperial Navy, and was sent to a place with some Wookie slave laborers, and got mad at the other Imperials abusing the Wookies and freed Chewie as one of them and that incurred the life debt and got Han kicked out of the Fleet... or is that a bit wrong?
