Yeah, my favorites would have to be FF6 and FF7 for their memorable characters, intriguing storylines (both involving corrupt governments much like our own), and fancy music and scenery. Hell, I'm willing to burn an entire CD just to put FF6 and FF7 music on it. Actually, I had an FF CD for a while until suddenly disappeared into thin air. FF9 was good, though its storyline was a little below average for a Final Fantasy. Still, it had Vivi. That earns it some major points in my book.
EDIT IN RESPONSE TO EDENMASTER'S POST: And yes, who can forget the memorable moments of FF4? It had to be the first of the exceedingly good Final Fantasies. I'll never forget May 5, 2002... the day that I beat FF4! (Yes, I marked the days I beat certain FFs.)
